Food Bloggers in Training

Over the weekend Panda and Monkey were clamoring around the kitchen wanting to make something.  They had drug out cookbooks, jars of peanut butter, ketchup, raisins, and basically whatever they could find that they thought should go into a recipe.

The ended up taking caramel corn and pouring caramel sauce on top and mixing it up.  It was pretty gross, but I gave them free reign to do whatever.  They ate a few pieces.  But I think they decided it was too sweet!

What was funnier was a picture I just discovered when downloading some pictures.  They have obviously watched me take pictures of my recipes so I can blog.  They took their own picture of their creation.  Without me knowing it.  Funny girls.

Recipes 9 and 10, A Sunday Meal

It’s a pretty rare Sunday that you would find me missing church and at home.  However, this past Sunday I woke up with a throbbing headache and all over aches and pains. So I plead near death and stayed home while The Farmer loaded up the crew and headed to church.
I attempted to go back to sleep. That lasted for about 10 minutes.  I don’t do a very good job of laying around. I get antsy. Even when I’m sick. So I decided the crew would be back in three hours and I should probably plan something to feed them.
So off I headed one final time to my 101 Homestyle Favorites cookbook from Gooseberry Patch.  I decided to pull a few recipes for this meal so I’d be wrapping up my cooking and moving on to the giveaway!
I knew I had a pork loin in the freezer so I decided to make Rosemary Pork Loin with Broccoli Cheese Rice as a side.
For the Pork Loin you will need:
3 pound pork loin
2 tsp dried rosemary
2 tsp dried mustard
1 tsp ground ginger
1 tsp salt
1 tsp pepper
2 TBSP olive oil
6 cloves of garlic, minced
Since we butchered a few hogs this past winter, I knew I had a pork loin in the freezer. Place the loin in a greased, shallow baking dish.
Gather all of your spices.  I couldn’t find rosemary in my spice rack, so I used Italian seasoning.  Close enough…it had rosemary in it!
I also always keep a jar or minced garlic in my fridge.  I never have time to roast and mince garlic.  So this is a great shortcut.
Mix all the spices, olive oil and garlic together.  Then slather on your pork loin.  Bake, uncovered, at 350 degrees for 1-1 1/2 hours.  Be sure to use a meat thermometer to check the doneness.  160 degrees, although some thermometers say 170.  When you get it out of the oven, this is what you will see!
As for the broccoli casserole, you will need:
26 ounces frozen broccoli
2 cans cream of chicken soup
16 ounces process cheese spread, like Velveeta
2 packages chicken-flavored rice vermicelli mix, prepared
This recipe confused me a bit. I didn’t realize when I started to make it that you basically cook everything and just put it in the crockpot to warm.  No big deal. I just should have read the recipe closer.
Cook your broccoli.  This may be my new favorite broccoli.  It cooks in the bag! And it tasted good too!
Then just basically dump everything in the slow cooker.  Remember you have to make the rice first.  I made mine in the microwave and just dumped it all in.  
And in the family’s haste to eat lunch, I didn’t get a final picture.  They loved this.  Next time I will use real cheese.  I’m not a fan of Velveeta in anything.  But The Farmer has polished the leftovers and made me promise I will make this again!

Cancer Sucks

Plain and simple, cancer sucks. I have lost two friends in the past year to cancer, one a beautiful 30ish year old friend, Mom to three, wife to one loving husband and friend to many. Brain cancer took her. And in the beginning of this year I lost another friend, this time to advanced melonoma. Husband, dad, friend.  Both felt unfair and leave questions I know can’t and won’t be answered until we meet again at the throne of God and I can ask Him why my friends were taken so early.

So cancer sucks.  We all know someone who has suffered from some form of cancer. And if you can spare a prayer, add my Real Farmwives of America bloggy buddy Leontien to your prayer list.  Leontien has fought cancer in the past and just found out her fight continues.  Unfair, unfathomable. But not unconqueable. 

Visit Leontien’s blog and leave her an encouraging word.  And say a prayer. Because cancer sucks. And we don’t need it to slow our dear friend down.

Recipe #8 – A Warm Cup of Goodness

The air has turned chilly in the Midwest.  And the sun is setting earlier.  And with cold, dark nights comes the need to drink something warm!

So off to the 101 Homestyle Favorites Cookbook from Gooseberry Patch I went.  And I found a recipe for Hot Caramal Apple Cider.  And that sounded like it could warm my toes.
The recipe is:
1/2 gallon of apple cider
1/2 c. brown sugar
1 1/2 tsp cider vinegar
1 tsp vanilla
4 inch cinnamon stick
6 whole cloves
1 sliced orange
Combine all ingrediants in a slow cooker.  Cover and cook on low for 5-6 hours.  Strain, discard spices and the orange. 

My favorite place to buy cider is from Doud’s Orchard, northern Miami County and just up the road from my house. While we have other orchards in the county making great hard cider, selling great apples and other sweets, I always head to Doud’s for my cider.

My ingrediants were all things found in my cupboards!

And I didn’t measure.  I never do!! Doesn’t it look pretty in my slow cooker?!

Recipe #7 – Comfort Food

I’m getting towards the end of my recipes from the 101 Homestyle Favorites from the Gooseberry Patch.  The weather has been a bit cooler in the midwest and I’ve been craving comfort food.  When looking for a recipe, I search out stick to your ribs, cheesy goodness.  And I found it in this recipe.
The recipe is:
2 Tbsp chopped onion
1/4 cup butter
1/4 cup flour
1/2 tsp. dry mustard
1 tsp. salt
dash of pepper
1 1/2 cup milk
2 cups shredded Cheddar cheese, divided
6 cups potatoes, peeled, cooked adn sliced
1/2 lb. cooked ham, diced
Start by peeling your potatoes.  I never have any idea how many potatoes it takes to make a cup.  So I usually guess two potatoes makes one cup of chopped up end product.
In a skillet, saute the chopped up onion in butter.  Blend in flour, mustard, salt and pepper. 

Gradually add milk, stirring constantly until thickened.  Mix in 1 1/2 cups cheese and stir until melted.

Remove from heat.  Add the potatoes and toss until coated.  Spoon into a greased 9×13 dish.  Arrange ham and remaining cheese on top.

Bake uncovered at 350 degrees for 30 minutes until hot and bubble.
You will love this.  Your kids will love this!  And it’s a one pot meal.  Easy clean up!!

Recipe #6 – Country Potato Bake

I love bacon. And cheese. And if you combine those two things, add some potatoes and soup you have what looks gross but tastes fabulous!

As I was working on another recipe from the 101 Homestyle Favorites cookbook from Gooseberry Patch, I found this recipe for Country Potato Bake.  It looked simple and I had the ingredients already on hand.

You need the following:
20 ounce package of frozen shredded hashbrowns
can of cream of mushroom soup
1 cup sour cream
1/4th cup melted margarine
1 c. shredded Cheddar cheese
6 slices of bacon, cooked and chopped
16 ounces French fried onions

Start by spreading the hashbrowns in a greased 9×13 pan.


Mix soup, sour cream, and margarine together and spread over the hashbrowns.


You then need to get your bacon fried.  This is how my bacon looks.  We butcher our own hogs every winter and package the meat ourselves.  So this is a package of bacon.  Looks yummy, right?!!!


Instead of frying six pieces of whole bacon, I used my kitchen shears to chop up 6 (or maybe 10) pieces of bacon. More bacon is fine by me! I then fried it in a small pan.


After the bacon was fried crispy and brown, I spread the cheese and bacon on top of the hashbrowns and soup.  I did not use the fried onions.  I don’t personally like those onions and didn’t have any in my cabinets.  Back the Country Potato Bake for 40 minutes at 350 degrees. 


This was delicious!  Although it’s not something I can justify eating every week.  Just too high in calories, despite the use of low-fat products where I could.  But it was good!!

Making Memories with a Fire Pit

Words can’t describe how excited I was the day I received an email from my Real Farmwives of America buddy saying we had a new partnership with Avant Garden Decor.  I could pick out anything I wanted from their huge catalog! Whooppeee!! The Farmer and I had wanted to buy a fire pit for the summer so the kids could enjoy making some memories on our patio.

Over the summer The Farmer finished building our outdoor patio and entertaining area.  The barn that used to stand here was an old bathhouse for immigrant labor that worked here long before my family bought the farm decades ago.  We finally tore down the walls and left the concrete slab, built an awning over it and added some flowers and mulch! We ended up with a great area for entertaining friends and roasting marshmallows with the kids!

Both girls had a great time roasting marshmallows.  We had a roaring fire going, although by the time I took the picture it had died down.  The wood was very wet and we had a hard time keeping the fire going.  But that was our own fault, and the recent rain we had on our wood stack, and the not the fault of the fire pit.

You can see the size of the fire we had going.  You might also note the lighter fluid in The Farmer’s hands.  Thank goodness this fire pit has great removable sides on it! And you might notice my Monkey doing some strange sword fighting dance with her roasting stick. 
And even though we wouldn’t let the Lion Cub roast his own marshmallows, he was his typical happy self just to be outside and enjoying the evening!
I can’t even begin to explain how lucky I feel to have had this chance to review this firepit.  My kids are making memories as we chase the daylight in the evening hours. We used the firepit again over the weekend.  At the end of the evening, they told me their best part of the day was sitting outside and talking as the fire roared in the background.  We are making memories. Memories I have sketched in my mind and etched in my heart.

A Lemon Cake to Die for!

We don’t eat chocolate in this house.  Seems a bit strange, being that three women live in this house. However, The Farmer doesn’t like chocolate.  So I don’t make cookies, brownies or chocolate cake to just sit on the counter and and tempt me to eat it.
Instead, we like ice cream.  And fruit flavors.  Cherry desserts.  And citrus.  I absolutely love lemon and lime.  Key lime ice cream is my all-time favorite.  Side note, curse to Ben and Jerry’s for taking their Key Lime off the shelves last year and not bringing it back.  I was going through withdrawals until I found a Key Lime Gelato that is even better! My hips aren’t very thrilled but my taste buds are.

 

As I continued my search through Gooseberry Patch 101 Homestyle Favorites from Gooseberry Patch, I was ready to try something different.  Dessert sounded fun.  And I was thrilled when I found a recipe for Lemon Cake.  Holy cow, this thing is incredible.  I dare you to not eat more than one piece when you try it!
Even better about this cake, it’s sort of homemade.  It uses some boxed items and some “real” ingredients to make a cake that is quick and easy.  And delicious.

The recipe:

A box of yellow cake mix
A small box of instant lemon pudding mix
3/4 c. oil
3/4 c. water
4 beaten eggs

Glaze:

2 c. powdered sugar
2  Tbsp. melted butter
2 Tbsp water
1/3 c. lemon juice

Lemon cake ingrediants
Start by beating the eggs in a bowl.  Then add the cake mix, lemon pudding, oil and water.

 

While you are mixing, go ahead and make the glaze.  Powdered sugar, lemon juice (I recommend actually juicing a lemon for better flavor,) butter and water all get mixed with a fork.

 

Pour the batter in a greased 9×13 pan.  I like this glass pan for non-chocolate cakes.

Bake for 30 to 35 minutes at 350.  When the cake is done, take it out of the oven and immediately use a fork to poke holes in it.  Then pour the glaze over.
Holy cow this is good!!  My kids devoured it.  I LOVED it.  And I’m hiding it from The Farmer so he can’t eat it all!  Not really, but I am leaving a note next to it indicating I will be back for another piece!  This cake will be a recipe that I use often. I can’t wait to take it to the field for meals during harvest. The guys will love it.

Lemon Cake to Die For
Ingredients
  • A box of yellow cake mix

Recipe #4 – A Great Use of my Crock Pot

I am totally in love with my Crock Pot.  I have a cooker that is 16 years old, a wedding gift, that gets used a lot!  So I was very excited to see Heartland Barbecue Beef for the crock pot in my Gooseberry Patch cookbook that I’m cooking through. 101 Homestyle Favorites wins a big star with this recipe.

The recipe:

2 lb beef chuck roast, cut crosswise into 1/2 inch slices
1/2 c. chopped onion
2 cloves minced garlic
2 c. catsup
1/4 c. brown sugar
1/4 c. Worcestershire sauce
1 tsp. mustard
1/2 tsp. salt
1/4 tsp pepper
6-8 split buns

This is so simple.  Basically combine everything except the buns into your crock pot.  Mix it up and cover.  Cook on low for 6-8 hours.  Serve on buns.  Simple!!

I wish I had a picture of the finished product, but my family ate it so fast that I didn’t have time to take a picture! But I can assure you, this recipe was super!
