A few weeks ago I bought a bag of granola. I was looking for a healthy, after-school but before sports practice snack for Alexandra. She is often starving when school gets out and I’ve had her keep a jar of peanut butter in her backpack. And a spoon. If she’s famished, she knows to eat a spoonful of peanut butter!
But I figured I could do better for her. Hence the granola purchase. The granola tasted like birdfood. It looked like birdfood. And she didn’t want to eat. Heck, I didn’t either.
I decided to make granola with her favorite ingredients, peanut butter and chocolate.
This recipe couldn’t be any easier. Plus you likely have the ingrediants on hand. I can’t promise this in incredibly low in calories. But I’m feeding an athlete. A kid who plays 4 sports, works on the farm and burns a tremendous amount of calories everyday. She needs fuel in her body! I love this granola too, I just eat a little less of it than she does. Now I can wrap a few bars for her sports bag or crumble it to eat on yogurt or with a spoon. This provides a ton of protein to get her through long practices and all of those dreaded wind sprints, “suicides,” and running up and down bleachers!
- 1½ cups peanut butter
- ¼ cup butter
- ½ cup honey
- 5 cups old fashioned oatmeal
- a bag of miniature semi-sweet chocolate chips
- Could also use raisins, cranberries, nuts, sunflower seeds or other additions to your preference
- Put peanut butter and butter in a large bowl.
- Melt in microwave
- Add honey and stir
- Add oatmeal and stir until everything is coated
- Add chocolate chips and/or additional ingredients
- Spread on a foil lined, 9x13 cookie sheet.
- Refrigerate until it hardens
- Can be cut into bars or crumbled
Hi Jeanette! My family has a similar recipe that we love. And on a busy night, I pair this with yogurt and some fruit for dinner. Everyone is happy :).
