I love breakfast. Biscuits and sausage gravy, grits, scrambled eggs with bacon and fried mush are a few of my favorites. But none of those foods are helping shrink my waistline. And I am making an effort to shrink some parts of me. So I’ve been on a hunt for some quick and easy breakfast foods that are easy to make and keep me full for more than a few hours.
The internet is full of overnight oats recipes. And I’ve been afraid to try them. I can’t stand instant oatmeal. It was something I ate all the time as a kid and I can’t even choke down oatmeal now. So the thought of going back to oatmeal for breakfast was a bit shocking to me!
However, I have found a way to make oatmeal that tastes great!
Chocolate Peanut Butter Overnight Oats. Yum!! I can mix these up in 60 seconds. And while they do taste better if you put them in the fridge for at least an hour, I have eaten them immediately too. They taste just fine. And if you sprinkle them with just a bit of chocolate chips, you get a very decadent breakfast treat, for roughly 300 calories! Enjoy!!
- 1 TBSP creamy peanut butter
- ½ tsp. vanilla extract
- ¼ cup low-fat vanilla yogurt
- ⅓ cup skim milk
- ½ cup old fashioned oats
- 1 TBSP cocoa powder
- Mix all ingrediants in a bowl. Refrigerate for at least an hour. Can store for two days in the fridge. Serve with a few chocolate chips!
